My new favorite food….QUINOA

First I’d like to start off by showing you some of the facts and health benefits about quinoa!

A few weeks ago I was trying to eat extra healthy and made a bowl of oatmeal but it made me sick!  My stomach was so upset and I couldn’t eat anything the rest of the day.  After talking to my Mom I remember numerous instances where I’d be on the phone with her after having a bowl of oatmeal for breakfast and then I just felt like sleeping.  She also told me that she had a food allergy test done and oatmeal was something she was allergic to.   So to play it safe I decided it was time to take it out of my diet.  That’s when I discovered I could eat quinoa and quinoa flakes in place of oatmeal.  Now I will be the first to admit that quinoa flakes are pretty bland.  I recommend adding fresh fruit or nuts to add a little flavor to them.  I even attempted a quinoa flake pancake with egg whites but it was pretty bland as well.

Now my favorite food of the moment is quinoa.  My go to quick quinoa recipe is 1/4 c of cooked quinoa, 1/2 c of chopped tomatoes, 1/2 c of chopped cucumbers, a handful of pumpkin seeds and a drizzle of oil oil and apple cider vinegar.  Thank you Dani Laux for this recipe!
