Two recipes I love

Friday night I made some yummy recipes that were nice and healthy and they also tasted delicious!   I get a lot of recipes from hungry girl and different diet books that I’ve purchased over the years.  If you have any favorite summer recipes please share with me and my readers.

Alison’s Favorite Spinach salad

1 bag of spinach

A few handfuls of walnuts

A few handfuls of craisins

Goat cheese probably around 1/2 cup

A few tbsp of walnut oil and a few tbsp of honey balsamic vinegar


Alison’s Spinach Salad and Coconut Chicken

Coconut chicken

I used smart balance coconut butter – about 2 tbsp (you can use regular butter or margarine)

I didn’t have fresh garlic so I used garlic salt either works

2/3 cup of shredded unsweetened coconut

You melt that in the microwave and then put it over 1-1.5 lb of chicken breast

Bake it in the oven at 400 degrees for 20 minutes and Ta Da!  Hope you’re enjoying this hot summer!  I had to show you my new workout gear.  Can’t get enough sunshine!
